Green Drinks for Kids

My boys seem to get pickier and pickier about eating their fruits and vegetables as they get older.  It is always my goal for the day to get their servings in, especially the green ones.  Their immune systems need to be strong in order to survive preschool, the park, birthday parties, and the grocery store (mainly the annoying race car cart with which I end up rear-ending displays, people, and other carts.)  It’s always a surprise to me that when I mention I’m making “Green Drink”, the boys come running.  I think they associate it with popsicles or the exciting prospect of using a straw.  Getting this “meal” in even once a week makes me feel better about their nutrition.  Pour yourself a glass while you’re at it.  Put the following ingredients into a blender and puree:

GREEN DRINK for KIDS

1 cup fresh spinach

1 cup frozen cooked carrots

1 cup frozen pineapple

1 cup frozen peaches  (any frozen fruit will obviously work)

1.5 cups of water (or more if it won’t blend)

1 T. agave or honey (optional)

2 T. flax meal  (Add any of the following:  fish oil, wheat germ, peanut butter, powdered kelp, probiotics, tofu, nuts, sprouts, or anything else you want to fit into your kid’s diet.)

This recipe serves 2-3 children.

NOTE:  Straws work much better than sippy cups when serving Green Drink.  Re-use those cups with the tops and big fat straws you get at restaurants.
